Do you make the sourdough in the smoker?

I was going to fire mine up to do some baby backs but the weather is just too rough right now at -18F. Too tough to regulate the heat in the smoker.
I have, but its easier in the house oven. I need 475 for the bread, do able, but not a good use of charcoal.

You build them smokers yourself if I remember right (on TFP)?

That thing is huge! Is that your go to or do you use something a little smaller for a couple racks of ribs?

I been using this dry brine for a couple years I get from a local meat market. Rub them generous and let them set in the fridge for 3 days flipping daily. This stuff is the ****! I hate big globs of fat when doing ribs and this stuff really makes the fat melt down to almost liquid. Best damn ribs that come off my smoker hands down!!! 16435707808808081425061888094501.jpg

I like to season and let it rest in the fridge for at least a day. Yes I make those out of 55g steel drums. I've made a number of them, each time I think, "I should of done this different" This is likely the last one.
That dry brine sounds great! What's in it?

Not sure, it's a big secret for them (understandable).
It gives a vague description of salt, pepper & spices. Lol

But it's good stuff for sure! Everyone around here that does meat uses it.
 
I didn't get home until about 6:45 last night. The kid had wrestling practice so the missus was gone and I didn't feel like cooking anything.

So I ordered dominos online and had the wife pick it up on the way home. It's been a lot of years since I had dominos pizza. I think they got better? I remember they used to taste like cardboard, lol. I only ordered because it was next to my kids wrestling gym. It either got better or I was really just exhausted and starving. I've been known to eat just about anything when I'm wiped out and be happy about it. Lol
 
Big cook on the weekend and leftovers for lunch line CJ. I swore off fast food last June, so taking food from home saves time and it's much better quality and healthier. When I turned 65 last June I made a commitment to try and be a little healthier.

My son quit fast food and lost 90 lbs in a year.
 
I believe it. Our shop is right next door to a Mcdonalds, I would go get coffee and a sausage McMuffin. I could write it off, so I figured WTF. Bigger problem for me was the second dinner I ate after dinner. Leftovers out to cool that I'm supposed to put away, as my wife goes to bed early, I eat some before I put them away. Cut that out too, for the most part. Have fruit on hand, or if I'm if it gets severe, lol, I eat a slice of the sourdough bread I make. Its the only bread I eat, and I do eat a small loaf a week, but its still better then the processed snacks. It took me 40 years to put on the extra 30lbs, I'm giving my self a year to see a decent drop. Baby steps...
 
I'm right behind you Steve. I have to start loosing some numbers myself. I put on a good 60 pounds over the last 6-7 years.
I typically don't eat lunch when I'm working. But I always grab a breakfast sandwich for the ride to the job. By the time I get home I'm starving. So I have a big dinner followed by munching until bed.
I started having a smaller dinner and cut out the munching after and have an orange or two around 8pm. I have to cut out the breakfast sandwich and replace with an apple or banana...
The breakfast sandwich is hard to kick though. 😂

They really aren't bad. Better than 7/11 😉
 
I'm 6'3 and hover 215 to 220. I've been between 212 and 220 for the last 25 years with a stress related deviation that lasted 6 months. Think I dropped to 186.
I piss off my cousin when I say things like " it's just food' or "the only reason I eat is so I don't die"
I'd rather have Marie Calenders or Dominos it's 10 times faster than fillet mignon. Like I said, it's just food'.
If it wasn't for chips, cookies, cake, chocolate milk and hops, I'd probably weigh 150. 😁
